Bracken-Starch Dumplings with Honey



Ingredients <6 servings>

(Bracken-starch dumplings)

* 100 g bracken flour
* 4 cups water
* 6 tablespoons honey
* 2 tablespoons roasted white sesame

Boiled beans (kidney beans), as needed

(A)
* 2 tablespoons soybean flour
* 1 tablespoon sugar

Honey, as needed

Slowly add water to the bracken flour and mix well so that lumps do not form.
Add honey and mix to taste.

Cook 1 over medium heat until the entire mixture becomes transparent,
stirring with a wooden spatula continuously and be sure not to burn the mixture.

Add the roasted white sesame to 2 and mix them together. Make sure that the mixture will not harden.
Briefly cool it in a water-cooled tray. After the mixture cools, wrap it in plastic wrap and
leave it alone to harden.

About 20 minutes before serving, put 3 into the refrigerator.
Take it out of the vat just before serving, cutting it into bite-size pieces,
and dish them up together with the kidney beans. Put (A) and the honey together just before serving.


* If you cool the bracken-starch dumplings in the refrigerator for a long time, they will get white and taste bad.
You can heat refrigerated dumplings to restore their original flavor.
