Using Honey of the Yamada Bee Farm
Crispy Horse Mackerel Marinated in Japanese
Sweet and Sour Peppery Vegetable Sauce



Ingredients <4 servings>
12 small horse mackerels
1/4 onion
1/2 green pepper 1/2 red pepper
1/3 carrot

Green leaves, as needed
Starch, as needed
Frying oil, as needed
Dash salt

(A)
* 5 tablespoons honey
* 2/3 cup honey vinegar
* 1-1/2 tablespoons soy sauce
* 2/3 cup dashi (basic Japanese broth)
* 1 red chili pepper (thin round slices)

Cut the onion into paper-thin slices, the green pepper into thin, round slices, and the carrot into fine pieces.

Boil (A) in a pan, then pour into the tray containing 1.

Remove scales, and also the gills and internal organs.
Then, quickly wash with water, drain the water, lightly salt both sides, dust with starch.
Shake off any excessive starch, and fry in oil at 170 degrees until well done.

Soak the hot 3 in 2 and leave for 5 to 10 minutes to add flavor.

Serve on 4 on a plate lined with green leaves.
