Using Chinese Dressing
CrispySauries in Marinated Japanese Sweet and
Sour Peppery Vegetable Sauce



Ingredients <4 servings>
3 sauries

Seasoning before cooking
* 1 tablespoon sake
* 1-1/2 tablespoons soy sauce
* 1 teaspoon ginger juice
180 g lotus root
350 g taro root
12 small sweet peppers


4 or 5 leaves lettuce
80 cm white leek

10 g ginger
1 red chili pepper(chopped small)

Starch
Frying oil
Chinese dressing

Cut off the heads and tails of the sauries, remove the internal organs, and wash them.
Drain the water, cut the fish into pieces 4-cm long, and season.

Peel the lotus root and cut it into a half-moon shape about 1 cm thick.
Peel the taro roots and cut it into halves. Boil both ingredients well, leaving some hardness.

Remove the seeds out of the small sweet peppers.

Cut the white leek in half,
cut it along its length to remove the core,
and cut it fine like white hair.
Dice the ginger and mix it together.

Heat the oil to 170 degrees and fry 2.
When fried through, add 3 and fry briefly.
Remove all from the oil and add the Chinese dressing.

Drain off any liquid of 1, dust with starch,
and fry in the oil heated to 180 degrees until crisp.
Add the red chili pepper and Chinese dressing
and allow to cool.

Spread the lettuce leaves on a plate, cover with 5. 6
and add the Chinese dressing to taste.
