Using Acacia Honey
Sardines Cooked with Plum and Honey


Ingredients <4 servings>
500 g sardines (small)
4 pickled Japanese plums
15 g ginger
1/2 white leek
1 pack radish sprouts
(A)
* 4 tablespoons honey
* 3 tablespoons soy sauce
* 1/3 cup sake
* 1 cup water

Remove the scales, head, and internal organs of the sardines and quickly wash them with running water.

Remove the pit from all the pickled plums and finely cut the ginger.

Pour (A) into the pan, cook it over low heat, add 1 slowly with little disturbance, and put 2 on top.

Skim off any floating froth.
When boiling rapidly, turn the heat down to medium and cook with a drop lid.


* You may also cut a circle of aluminum foil adjusted to the size of the pan,
make a hole in the center, and use it as a droplid.

Cut the white leek 5 cm long and grill.
Cut off the roots of the radish sprouts and boil briefly.

Serve 4 on a plate. Garnish with 5.
