Using Honey of the Yamada Bee Farm
Honey Chicken Snacks



Ingredients <4 servings>
4 chunks bone-in chicken leg meat
* 1/2 cup honey
* 1-1/2 cups hot water
1 cucumber
1/2 white leek
1 head lettuce
Bread for sandwiches, as needed

* 80g reddish-brown miso (Japanese bean paste)
* 4 tablespoons sugar
* 1/4 cup sake
* 2 tablespoons lard
* 1/3 cup honey
* Herbs, as needed

Pour hot water all over the chicken leg meat to make the skin taut.

Mix the honey in hot water, let it cool, pour on 1,
the chicken meat, then hang the meat to let it dry. Repeat this marination three times.

Thinly slice the cucumber and white leek into 5 cm long.

Melt the lard in the pan, add the reddish-brown miso, sake, sugar, and honey, spread and
knead carefully to prevent burning. When the mixture gets thick, turn off the heat and let it cool.

Put 2 into the oven heated to about 180 degrees
and roast about 25 minutes until the meat is crisp with good color.

Serve 5 and garnish with 3 and 4. Eat each piece with lettuce or bread.
